According to a new study published in the Journal Food Chemistry, mushrooms containing the antioxidants, glutathione and ergothioneine can help with anti-aging procedures.
When the body digests food, free radicals are produced thus causing oxidative stress. Free radicals are highly reactive oxygen atoms seeking to pair with electrons. These atoms can cause damage to cells, proteins and DNA. With antioxidants like glutathione and ergothioneine, the body is able to protect itself better from oxidative stress.
Although the body has instruments to control these atoms, including ergothioneine and glutathione, there is eventual buildup that can cause harm. For example: cancer, coronary heart disease and Alzheimer’s; all diseases of aging.
Quote from Professor Robert Beelman “What we found is that, without a doubt, mushrooms are highest dietary source of these two antioxidants taken together, and that some types are really packed with both of them.”
